Denne Mardi Gras Slaw serveres på en restaurant i Calistoga, Californien. Det er endelig lykkedes at få opskriften:
Ingredients for six servings:
¼ head red cabbage, thinly sliced
¼ head green cabbage, thinly sliced
1 green zucchini, cut in half lengthwise and sliced into a half moon
1 yellow zucchini
1 red onion, julienned
½ cup lemon vinaigrette (see below)
Vinaigrette:
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 teaspoon white wine vinegar
¼ teaspoon kosher salt
Pinch ground black pepper
½ teaspon shallot, minced
½ teaspoon garlic, minced
5 tablespoons olive oil
Zest of 1 lemon
Blanch zest and refresh in ice water. Reserve.
Place all ingredients, except oil and blanched zest, in a blender and blend at slow speed.
Add oil with machine on, first in a drizzling, then faster.
Remove from blender and add zest.
